Synergy Flavors introduces new dairy flavours portfolio

US-based supplier Synergy Flavors Inc has launched a new portfolio of natural taste solutions called ‘Dairy by Nature’, developed to address the formulation needs of both dairy-based and plant-based applications.

According to the company, Dairy by Nature combines Synergy’s knowledge of natural flavour extraction and creation with the dairy technology of parent company, Carbery.

The new portfolio aims to meet consumer demand for both “clean label and clean taste”, and is designed for both dairy-based products and plant-based alternatives. Its applications range from from fresh and cultured dairy products to nutritional, bakery, beverage and confection, as well as savoury applications such as dips or cheese. It also claims to provide the means to cleanly build back the creaminess of full-fat dairy and mask undesirable off-notes in plant-based alternatives.

Synergy has claimed that combining flavour science with modern dairy fermentation expertise allows the company to create technically-layered ingredients for taste and enhanced functionality. For example, unlike typical flavours that add a singular top note, such as caramelized butter or condensed milk, Synergy has developed advanced solutions that enhance quality, mouthfeel and flavour retention.

Corunda Pruitt, senior technologist for Synergy Flavors, Inc., commented: “Each application scenario poses unique challenges. However, whether formulating plant-based products or creating reduced fat dairy, the end goal is a food experience that forms an emotional connection with the consumer. Dairy by Nature is designed to supply a positive organoleptic experience including taste, texture, body and mouthfeel across a spectrum of food matrices.”
